If you want to give this rich, creamy, cheese-laden Brussels sprouts gratin dish a go, here’s how to make it.
Firstly preheat the oven to 200 degrees celsius. Then grease a 9×13 baking dish with cooking spray or butter and set aside.
In a large skillet, heat two tablespoons of olive oil over medium heat.
Add three large leeks (thinly sliced) to the pan and cook for four minutes. Add four cloves of garlic (crushed) and cook for one minute longer.
Transfer the leek mixture into a large bowl along with the shredded brussels (one pound), toss to combine.
Using the same skillet, add two cups of heavy cream, four oz of Gruyere cheese, 1/2 cup of parmesan, salt, pepper, thyme and ¼ teaspoon of nutmeg.
Bring to a simmer stirring continuously until cheese melts and a thick sauce is achieved, about three minutes.
Pour the sauce over sprouts and leeks and toss to coat.
Transfer the sprouts mixture into the prepared baking dish. Place it in the oven on the center rack for 20 minutes.
In a small bowl, combine one cup of panko with 1/4 cup parmesan and three tablespoons of oil.
Scatter bread crumb mixture over sprouts and return to oven until golden brown for five to eight minutes.
